Would it be possible to be able to dynamically set the APP_VERSION variable? Perhaps in the prerun or postrun, or in the version itself.

Sorry for the very late response, but I'm pretty sure if that variable is visible to deb2appimage, it should also be visible to appimagetool when it is ran.
