Customising WooCommerce Checkout

Hi all,

With the new woocommerce cart & checkout blocks, is there a best way to remove them from Understrap as I'm trying to create a custom checkout page template which just uses the standard '[woocommerce_checkout]' shortcode to output the checkout forms, but when I assign that to the checkout page, I then have two checkouts as the new block version is loaded above any other page content.
